2016 GSM

Sigillo’s GSM for 2016 is almost a perfect blend of the 3 varietals for a typical GSM.  Overall, we expect the 2016 vintage to be one of the best with high quality fruit due to the extended hang time, with larger berry and cluster size.  Our Grenache this year was a spectacular varietal and thus dominates this blend. As we change the varietal composition every year, the key reason is the way the fruit assimilates. Our Syrah source from Clifton Hills will also make a difference in this blend.

2016 Relativity

Our 2016 Sigillo Cellars Relativity is a Southern Rhone style wine, consisting of 36% Grenache, 36% Syrah, 18% Cinsault, 6% Mourvèdre, 4% Counoise.  These 5 varietals were chosen for our Relativity blend because of their diversity and what each adds to the blend. The result is a harmonious mix of aromas and flavors.

2017 Roussanne v1.1

Our 2017 Roussanne, v1.1 is the very first “slightly sweet” wine we have produced.  With many requests for a sweeter wine by our customers, we are confident this vintage will sell well.  The “v1.1” intends to mimic a software version of the wine while providing the actual “RS” (residual sugar).  The fruit on arrival was “whole-cluster” pressed as a varietal and fermented in stainless.  This process brings an earthy sense to the palate.

2017 SnoValley

Snovalley is a very popular white blend we produce year after year, changing its blend based upon the fruit as it develops in any given year.  Our 2017 was changed back and similar to our 2014 version by the addition of Chardonnay which makes it a great Spring and Summer blend.  Its blend is 50% Viognier, 27% Chardonnay and 23% Roussanne.  It exibits aroma/tastes such as Meyer Lemon, Fuji Apple, Apricot, Rose and Honey.

2017 Sparkling Viognier

The 2017 Sparkling Viognier was made in the true Champagne Method, meaning that a second fermentation was carried on inside the bottle in order to give the wine its effervescence. The initial fermentation was completed by Sigillo Cellars in stainless tanks. The second fermentation was then started in the bottle by Karma Vineyards, and the wine was layed down for 9 months prior to the disgorgement (i.e. removal) of the lees, which was a byproduct of the fermentation in the bottle.  Subsequently, the wine was topped up and a traditional cork and wire cage were applied to the bottle.  A foil capsule was then applied and the process was complete.

Our 2017 Viognier is definitely among our best varietals ever.  After switching to Lonesome Spring Ranch Vineyards, we've come home to the true charateristics of a lovely Rhône style Viognier.  It exhibits aromas/tastes of Lemongrass, Green Apple, Pear, Honey, Dandelion.
